Haluški: basic traditional dish of the Servika Roma. The dough is prepared from grated raw potatoes thickened with flour. Small pieces or thin strips of
the dough are cut off or torn off and thrown into boiling water. When cooked, they are strained and
combined – depending upon taste and the momentary financial situation – with either cooked sauerkraut,
boiled cabbage or cottage cheese. Brynza (sheep cheese) was not commonly used in the
Roma community. Haluški with brynza is a typical Slovak
dish. The kind of fat poured over it depends on taste and availability at home.
